Playing catch up

                So again I haven’t posted in a few weeks as always we’ve been rather busy but when I have had a few free minutes I can’t come up with anything even worth blogging about. I’m considering starting a new blog since currently the “spoiled housewife” isn’t really fitting considering I work fulltime and most of my time is spent away from the house. The wife and I have discussed being co-bloggers but she isn’t into writing much with her busy school and work schedule, she would actually prefer if we video blogged. We’ve made a couple videos but haven’t uploaded them anywhere yet. I’m considering doing a new blog with a combo of video and writing… we’ll see maybe we can keep this blog and just post more frequently and post videos as well. We’ll I’ve gone on for a whole paragraph about blogging and not blogging so I guess now I should do a few updates as to what has been going on over the past few weeks.

         My last post was that we have planned a trip to New York for Labor day in between that post we’ve been busy 4 weekends in a row weekend 1 I worked overtime, weekend 2 we attended a former co-workers wedding in Ocala, weekend 3 we went to St. Pete pr.ide and weekend 4 was the 4th of July we went to Orlando. The 4th of July weekend was filled with fun, shopping and water parks. After 4 very eventful weekends we we’re planning to spend this one at home relaxing and just catching up with things around the house, unfortunately other plans have arose. Firstly one of my sisters is in town until Sunday this wouldn’t be a problem except for all the problems we’ve been having with Old Blue (our older car). Over the last month the car has given us one problem after the other, in the last we’ve spent close to $500 in repairs and now there are more problems.  It’s a 1993 Subaru Impreza that I paid $4000 for 5 years ago so after much debating with the wife I now agree that it just isn’t practical to spend additional money on this car. So our relaxing weekend will now be filled with driving from one used car lot to another until we find a car that we hope will be reliable for the next few years. Other than the car drama there are a few other updates the wife has completed 1 of her two summer classes, my job has really started to pick up my company is closing 2 offices and consolidating all the work to my office so of course that makes for long busy days, little Snowy is getting bigger everyday and she and Precious are finally getting along YAY. Keeping with my tradition I’ll close this post with a few pics just to give a glimpse into this craziness that is our life.

Anniversaries, Birthdays and Kittens an update with pics

I’m just getting around to posting again, lately we’ve been kinda busy with our anniversary and the wife’s birthday just being a little over a week apart I haven’t had much time to post. Here’s a quick update of whats been going on in our little corner of the world.

We celebrated by going out for a simple dinner and we lit our unity candle, this will become our yearly tradition.

For my anniversary gift my wife got me an adorable kitten, we named her Snowy.

Update #3: My wife is now 26 years old, I can’t believe I’ve known her since she was 22 wow!

Back on track

So its been a few weeks since my last post, things have been going well I’ve graduated and I’m starting to become settled in my new job. My new job is a welcomed change from the sucky call center positions I’ve held in the past. I’m currently working in the insurance industry at a company that handles arbitrations. I love my new job its a great company at a brand new office, the benefits are great and I’m actually able to do useful tasks rather than answer phones and get yelled at by irate customers all day. Along with this great job comes a paycheck yay! so we have finally got back on track and can begin saving again. Our current goal is to pay off all our credit cards before August and then begin doubling up on our car payment and paying more on both our student loans. I’m so glad things are working out for us yay!P5020424

Cooking made easy

Today I found the simplest recipe for chicken marsala, I made it in under 30 minutes and needless to say it was simply DELICIOUS!  The wife and I had been craving some chicken marsala ever since we both had our first taste of it at our wedding. I actually made a few changes to the recipe but it was so very tasty. We enjoyed fettucine topped with the marsala all I can say is YUM!!!  I’ll  post the recipe I used. ENJOY!!! Bon Appetit!

chicken marsala in recipe

1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves – pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking white wine

2 tablespoons lemon juice

1 tablespoon parsley flakes

1. In a shallow dish or bowl, mix together the flour, salt, pepper, parsley flakes and oregano. Coat chicken pieces in flour mixture.

2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and lemon juice. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Yay it’s the weekend and I found a lovely suit!

Today was my last free Friday before I start working again. All in all today was a great day I had lunch with my lovely wife,we tried a new restaurant and actually liked it (which is a BIG deal for me since sometimes I can be a picky eater) and I bought a super cute C.outure swimdress(see below but mine is downhill which is a tiffany like blue).  Of course to most buying a new swimsuit would not be of any importance but I’m really excited and relieved about it, you’re probably wondering why but wait a sec and I’ll fill you in. Over the last few months or maybe years I’ve slowly put on weight of course a pound here and another there can generally go unnoticed until it’s swimsuit season and I notice my once flat stomach is nowhere near its original appearance. My first thought was I have to workout maybe if I take out my belly ring it will give my an incentive ie once I get back in shape I can reward myself and get it re-pierced ha well fast forward over a year later belly ring still not in place and stomach nowhere near flat. So to solve my dilemma and disguise my laziness I decide on a one piece swimsuit for this summer and promise myself by next year I will have done enough sit-ups and spent time at the gym and will be able to look stunning in a two-piece. So now that I had a plan of action ie said one piece, I began searching the net for cute suits after discovering several less than desirable suits I start thinking there most be some way find a cute one piece while not being mistaken for twins with my grandma. My solution is to look for what I like I know I love vintage and retro style so I search pin-up girls and ding ding ding a bell goes off I’ve found my dream suit, now I’m off to search the stores  first tar. get find nothing but an ugly black suit then T.j Ma.xx and I  find the lovely Ju.icy halter dress suit for only $50 what a steal! I’ve search the exact style online and it goes for $150.00+. Yay I can still look cute while disguising my less than cute stomach beware beach and pool here me and my ju.icy come!!!!

prayers have been answered

      I officially have the job that I previously mentioned, I was offered the position today and of course  happily accepted. I’m a little disappointed that the pay is slightly less than what we hoped for but its more than my last job. I’ll be eligible to get my own insurance on May 1st so the wife can remove me from her benefits saving us about $200 per month so that should more than make up for the pay difference. I’m so glad to have a job again now we can get back to saving for our big move to Boston, buying a house and baby making. I’m giddy with excitement things seem to be headed back towards perfect, we hit a few bumps in the road but our plan wasn’t derailed thank goodness!

Things are finally getting better…YAY!!!

Breaking news!!!!

I’ve found a job!!!  Today I went for my drug test and I start training on Monday. I’m so happy that soon I will be working again now we can get back on track with our savings and paying off our credit cards. Other good news I’ll be graduating in about three weeks so I’ll finally have my AA.  I’m so thankful things are starting to fall into place, hopefully things will only continue to get better from here…
